The session is demonstration-led and highly practical, with each technique explained step-by-step before being practiced by participants. The class is relaxed, engaging, and designed to build confidence while developing essential kitchen skills. Techniques and Dishes Covered Tortillas (Masa & Flour) Dough preparation and handling Shaping and cooking techniques Chipotle Chicken (or vegetarian alternative) Slow cooking methods Balancing smoky, sweet, and acidic flavours Fish Tacos Batter preparation and frying Texture control and assembly Salsas & Sauces Guacamole (ingredient selection and balance) Pico de Gallo (knife skills and seasoning) Burnt spring onion dip (developing depth of flavour) Dessert – Mexican Chocolate Torte Mixing and baking techniques Flavour pairing and finishing Workshop Structure -Demonstration of each technique -Guided hands-on preparation -Ongoing instruction and feedback -Coordination of multiple components Participants are actively involved throughout and work through each stage under guidance. Cancellation Policy

Another Fine Mess – Terms & Conditions 1. Definitions “We”, “us”, “our” = Another Fine Mess Cooking Camp & Workshops. “You”, “your” = the person making the booking. For under-18s, this means the parent/guardian who submits the booking. “Participant” = the person attending the workshop or camp (if under 18, includes their parent/guardian as applicable). 2. Booking & Payment A booking is only confirmed once we have received full payment and a completed registration form. Please check your confirmation invoice immediately. Any errors must be reported within 2 days of receipt. After this, we will try to help, but any costs fall to you unless the error was ours. 3. Cancellations & Changes by Us Itineraries and menus are subject to change and are guides only. Flexibility is required. We will not cancel less than 10 days before an event, unless due to circumstances beyond our control (e.g. severe weather, industrial action, venue loss, natural disasters, epidemics/pandemics). If we cancel and cannot offer an alternative, you will receive a full refund. Low enrolment: We require a minimum number of participants to run. If numbers are not met, we may cancel or consolidate the session. If no alternative is offered, a full refund will be issued. 4. Cancellations & Changes by You All changes/cancellations must be requested by email. Refunds: 14+ days before event: Full refund. Within 14 days: 75% non-refundable. Within 72 hours: No refund. After event starts: No refund. Medical cancellations: Full refund with doctor’s note within 3 days; after that, 50%. Covid-related cancellations: No refund within 72h unless we can fill your place. If filled, we will refund you. 5. Participant Responsibilities Adults: Participants must follow staff instructions, respect the space, and behave safely. Disruptive behaviour may result in removal without refund. Under-18s (extra conditions): A completed consent form must be provided. Parents/guardians must be available to collect within 1 hour in case of illness, injury, or behavioural issue. Participants are expected to respect staff, peers, and facilities at all times. Camp hours are strictly 10:00 AM – 2:30 PM, Mon–Thu. We are not responsible for children outside these hours. 6. Liability We are not liable for loss, injury, or damage caused by circumstances outside our control (e.g. weather, strikes, technical failures, pandemics). We will take reasonable care, but you attend at your own risk.
